Pomegranate-Glazed Salmon Recipe

Pomegranates rank among the most beautiful fruits due to their pink skin and ruby red seeds. Pomegranates, one of the first farmed fruits, held a significant place in various cultures' religion, art, tradition, and mythology.

Start with a 400-F oven. Add 2 tablespoons pomegranate molasses, 1 tablespoon olive oil, maple syrup, garlic, ground cinnamon, and red chilli flakes to a small bowl.

Sprinkle salt and pepper. Set the salmon in a flat-bottomed bowl with the glaze for 15–20 minutes.

In a small bowl, combine chopped walnuts, pomegranate seeds, cilantro, mint, 1 tablespoon olive oil, 1 teaspoon molasses, and white wine vinegar.

The walnuts or fresh herbs may be substituted depending on availability.

In a baking dish, coat salmon with extra glaze and bake for 10–12 minutes until flaky and just cooked.
